I realize I’m a little late to the whole green smoothie thing. My husband jumped on the train a couple of months ago and I was all like, “this is nasty.” Then I decided to take a taste and I’ve never looked back. It’s such a great way to pack a punch into your breakfast. It took awhile to perfect this one, but I just love it. The carrot juice adds sweetness – who knew. We drink this every morning and it makes me feel like I somehow earned that maple syrup whipped cream after dinner:)
2c carrot juice (I’ve tried a bunch and we love Bolthouse Farms the best)
1c frozen blueberries
1c frozen peaches
1c spinach leaves
Add carrot juice into blender followed by blueberries, peaches and then spinach. Blend for several minutes until completely blended through. Add more carrot juice to make consistency thinner if so desired.
