Tomato & Cucumber Barley Salad w/ Lemon Honey Dressing

barleysaladSummer is almost over!  How can it be?  It just started.  I’m mourning the loss of awesome family vacations and extra help from my husband who works with college students and has a more flexible schedule in the summer.  So in an effort to hold on to the last few summer days, I made a summer salad with tomatoes and cucumbers from our garden.  I love making stuff like this at the beginning of the week and eating off of it for the rest of the week.

4-6 Servings

3c cooked barley

1/2c halved grape tomatoes (or cherry)

1/2c quartered cucumbers

1/4c crumbled goat cheese (or feta – I like the creaminess of goat)

Dressing:

1/4c fresh lemon juice

Dash of lemon zest

1/4c olive oil

5 large basil leaves chopped

1Tbs honey

1tsp salt

1/4 tsp pepper

Cook your barley and lay aside to cool. Chop your tomatoes, cucumbers and basil leaves and lay aside.  Prepare your dressing: combine olive oil, lemon juice, lemon zest, honey, salt pepper and chopped basil leaves.  Whisk for a minute until lemon  juice and olive oil are combined. Make sure your barley has absorbed all of the water and if not, drain remaining.  Combine tomatoes and cucumbers into barley.  Whisk dressing and pour slowly over salad.  Toss and sprinkle with crumbled goat cheese.
