Whole Wheat Spinach White Pizza

whitespinachpizzaI love making homemade pizzas, especially white pizza!  White pizza is a little off the beaten path and fancy enough to make when guests come over minus the hard work and expensive ingredients.  It’s gotta be the ricotta that makes it so yummy.  It’s rising on my favorite cheeses list b/c of its subtlety.  Ricotta is not as bold as blue and goat cheese – which can be too rich for me in certain dishes like pizza.  Because we work with college students and have big groups over all the time, whipping up a couple of homemade pizzas and a salad is cheap, easy and shows a little extra love instead of picking up the phone to call Papa John’s (hands down best carry out pizza)!

Serves 3 – 4 (2 slices each)

1 Pillsbury Whole Grain Artisan Crust (you can make your own whole wheat dough but this makes it uber easy to throw together on a week night and it bakes up nicely – no gooeyness in the middle)

2 minced cloves garlic

3 Tbs olive oil

1c shredded mozzarella

1 1/2 c spinach leaves

8-10 Tbs of low fat ricotta

1 Tbs dried basil

1 Tbs dried oregano

Preheat oven to 400.  Place crust on pam-sprayed pan.  Bake crust (no toppings yet!) for 8 min.  Remove from oven.  Combine olive oil and garlic – brush over crust until evenly distributed.  Place spinach leaves evenly over olive oil.  Sprinkle mozzarella over spinach leaves.  Dollop ricotta cheese evenly over mozerella.  You don’t need to spread the ricotta just leave the dollops as is and they will soften and spread a little while baking.  Sprinkle with dried basil and oregano.  Bake for additional 10 minutes until cheese are melted.
