Have y’all discovered macaroons yet?! These little cookies are AMAZING and so simple to make. They are bite-sized chewy wonderfulness! I try to always keep shredded coconut around in case I need to whip up a dessert on the fly. They take about 5 minutes to prepare and 20 minutes to cook and voilà you have yourself a fabulous cookie. They last all of 1 day around our house (as do most desserts) 🙂
Makes 12 small cookies
2 c sweetened shredded coconut
1/4 c maple syrup
3 Tbs all purpose flour
1/4 tsp salt
2 egg whites
1/2 tsp almond extract
Preheat oven to 325 and grease cookie sheet.
1. Combine coconut, maple syrup, flour, salt and almond extract in bowl. 2. Beat egg whites and fold into coconut mixture.
3. Dollop mixture in Tablespoon-sized scoops onto cookie sheet (they are going to seem very wet and might not stick together well, don’t worry, they will be fine once baked!).
Bake for 20 minutes. Remove and allow to cool before serving!
