Today was a hard day. You know, one of those days where you feel defeated before the clock strikes 10am. We needed groceries for the week so I loaded the girls up and headed to the store and no more than five minutes into shopping my oldest began her first stand off. It ended with her screaming at the top of her lungs while everyone starred at us in the frozen vegetable aisle. My youngest is teething and was a hot mess too. She decided she did not want to sit in the cart but wanted me to hold her. So there I was, holding my 16 month old, trying to reason with my crying, defiant 4 year old and pushing a grocery cart through Kroger. I wanted to give up and cry on the spot, but instead, I drowned my sorrows in a Chick Fil A Diet Coke, took a deep breath, and drove the long route back home.
In the midst of this very bad day (which did get worse but I will spare you the details) three words came to mind. Chocolate. Coconut. Popcorn. Put them together and it is heaven in your mouth. It turned out to be the sweet of this very sour day:)
God, thank you for a new day tomorrow. Not so I can muster up more strength to do it better: parent better, work out better, show more patience better, carve out time to spend with You better. But so I can be reminded that your mercies are new to me every morning – your grace towards me rests not on how I performed today as a mom, but on what Jesus has already done for me centuries ago on the cross.

1/2 c popcorn kernels
3 Tbs melted coconut oil + 1 Tbs to mix into candy coating
1 tsp salt
3/4 c unsweetened coconut flakes
1 16 oz. package chocolate candy coating
Melt your coconut oil in the microwavable bowl. Pour your kernels and salt into the bowl with the oil and use a spoon to coat them. Place a brown paper bag on a microwavable plate and pour the oil-coated kernels in the bag. Fold the bag over a couple of times and microwave your kernels for 2-2 1/2 minutes. Mine were done at 2 minutes. Set popcorn aside. Set oven 325 degrees. Spread coconut flakes out over a baking pan. Bake for 5-8 minutes until the flakes begin to brown slightly. Take flakes out and set them aside. Melt your candy coating according to package instructions. Stir 1 Tbs coconut oil into candy coating to thin it out. Spread the popcorn out over a large baking sheet. With spoon, drizzle chocolate over popcorn. Do this until the popcorn is coated thoroughly (you want it to be heavily coated so the coconut sticks to the chocolate but you will probably still have leftover candy coating). Sprinkle toasted coconut over chocolate and allow chocolate to harden before serving. Enjoy!
