I’m starting to prepare for Thanksgiving which means cookbooks are strewn all over my kitchen table as I decide what I am going to make!  So many options…sweet potato casserole, rosemary and orange turkey, green bean casserole, and brussel sprout salad.  Lord knows we will have days worth of leftovers for lunch and dinner.  But what about breakfast?!!!  It’s the forgotten meal in the midst of Thanksgiving dinner.  This recipe is one of my mom’s – an old favorite that she whips up on Thanksgiving and Christmas morning.  It’s SOOOO easy and delicious…serve it up with some cinnamon rolls and you’ve got holiday mornings covered:)

Serves 6

1/2 c salsa + extra for serving

1 c shredded cheddar cheese

1 c shredded mozzarella cheese

8 oz light sour cream

1 c chopped fresh spinach (optional)

1 bundle of cilantro

8 eggs

Preheat oven to 350 degrees.  Pour 1/2 of salsa into lightly greased 9 inch quiche or pie plate.photoSprinkle cheeses over salsa (meatloaf the dog made an appearance!).

photo 1Place eggs in blender and blend for 1 minute.  Pour in sour cream and spinach and blend for another minute. photo 2Pour on top of cheese and bake for 30-35 minutes until set.

This breakfast casserole is an old favorite and so simple. It combines eggs, salsa and cheese - couldn't get easier or tastier:)
Ingredients

Instructions

  3. Sprinkle cheeses over salsa.
  4. Place eggs in blender and blend for 1 minute.
  5. Pour in sour cream and spinach and blend for another minute.
  6. Pour on top of cheese and bake for 30-35 minutes until set.
  7. Serve with additional salsa and sprinkle with chopped cilantro.
