Andes Peppermint Crunch Brownies

I was in the grocery store yesterday picking up antibiotics for my girls (double ear infections for both…poor things!  And right before Thanksgiving! )  We had some time to kill in the grocery store before their prescriptions were going to be ready so we started perusing the aisles.  I ran across these Andes Mint Peppermint Crunch candies and immediately thought, “These would be AMAZING in brownies!”  And I was right…layer these babies in between boxed brownies and you get a gooey, pepperminty, white chocolatey crunch brownie.  Hope you’re as sold as I was:)

1 boxed brownie mix (I like Betty Crocker Fudge Brownies (family size) the best.  It calls for 2 eggs, 2/3 c vegetable oil and 1/4 c water)

1 9.5 oz package Andes Peppermint Crunch (I found mine at Kroger)

Preheat oven to 325 degrees.  Grease 8 x 8 pan.

photo 1Mix brownies up according to the directions.  Pour half of the batter in the pan.  Unwrap 12 candies and place them evenly in 3 rows of 4 candies.  Pour the other half of the batter over the candies.

photo 2Take 6-8 candies and coarsely chop them up with knife.  Sprinkle candies over top of batter.

photo 3  Bake for 52-54 minutes or until fork comes out clean.

These brownies are the perfect holiday treat. They combine Andes Peppermint Crunch Squares and Betty Crocker Box Brownies to make the gooey, chocolatey, peppermint goodness:)

    Bought some Graeter’s Peppermint Stick ice cream to enjoy with brownies. It was tasty, but this would be just as tasty without the cold!
