One-Bowl Easy Peanut Butter Cookies

The weather has turned nasty here today – we’re supposed to get freezing rain in the next 24 hours…yuck!  All day I have been thinking about a trip that our family took out to Estes Park, Colorado two summers ago and I’ve been wishing that I could transport myself back to 70 degree weather with no humidity.  Since that’s a no-go, second best is whipping up a batch of peanut butter cookies.  My mother-in-law made a couple batches of these for the Colorado trip and we devoured them in between and after every meal – THEY WERE SO GOOD!  I did my best to re-create the peanut buttery, chewy goodness…definitely made the rainy day more enjoyable:)

Makes 12 cookies

1 egg

1 c creamy peanut butter

1 c sugar + 1 c sugar (for rolling cookie dough in)

1 tsp vanilla

1/2 tsp salt

1 tsp baking soda

Preheat oven to 350.  Grease a large baking pan or use a silpat.  Mix all ingredients in large bowl or standing mixer.

photo 1Pour 1 c sugar in small bowl.  With small spoon, roll dough into 1-inch balls.  Place balls in bowl with sugar and roll until dough is lightly coated.

photo 2Place on cookie sheet and with fork, gently press “X” on top of cookie.

photo 4Repeat until dough is gone.  Bake for 8-11 minutes.  Allow to cool before serving.

These one-bowl peanut butter cookies are inspired by a recipe that my mother-in-law uses. They are sweet, salty and chewy - exactly what you want in a peanut butter cookie!
