Classic Oatmeal Chocolate Chip Cookies

oatmealchocchipcookiesWe are getting ready to embark on a Christmas adventure where we will spend the next week at Crystal Mountain Resort.  There is about every winter activity  you can possibly imagine there – skiing, snow shoeing, snow castle building, and sleigh rides.  My four year old is so excited she doesn’t quite know what to do with herself!  We are staying in a house and cooking most of our meals so over the last week my mom and I have been going back and forth about our menu.  Homemade pizzas, roasted chicken, taco night, short ribs with polenta and of course dessert!  We are BIG cookie eaters around here – it trumps all other desserts for us.  So my mamma put me in charge of baking the oatmeal chocolate chip cookies!  These are perhaps my favorite type of cookie…I had to put them in the freezer so we wouldn’t devour them before our trip:)

Makes about 3 dozen

2 sticks butter

1 c sugar

1 c brown sugar

2 eggs

1 tsp vanilla

2 c flour

1 1/2 tsp cinnamon

1 tsp baking soda

1 tsp salt

1 c old fashioned oats

1 c chocolate chips

Preheat oven to 375 degrees.  Cream butter and sugars until smooth.  photo 1Beat in eggs and vanilla.  In separate bowl combine flour, salt, cinnamon, and baking soda.  Beat into creamed mixture.  Stir in oats and chocolate chips.  photo 2Drop with small spoon onto greased baking pan and bake for 10-12 minutes.photo 3

These cookies are my absolute favorite! You cannot beat oatmeal chocolate chip cookies in my opinion.
Ingredients
