Roasted Sweet Potatoes & Apples

roastedsweetpotapplesIf you’re old people like us, New Year’s Eve looked a little something like this:  feed kids dinner, do baths, read stories, put them to bed, cook red snapper, brussel sprout salad and roasted sweet potatoes & apples, sit down for a quiet dinner and stay up until midnight playing Mexican Train.  Yep, that was it….and it was WONDERFUL!  This savory side is perfect with any main dish…it’s a favorite around here:)

4 large sweet potatoes diced

3 large golden delicious apples diced

1/4 c melted coconut oil

2 Tbs ground cinnamon

1/4 c maple syrup

Preheat oven to 425.  Place diced sweet potatoes and apples on large baking sheet.  drizzle coconut oil over potatoes and apples and sprinkle cinnamon.  Mix all together with hands to get apples and sweet potatoes covered sufficiently with oil and cinnamon.  Bake for 25 minutes until sweet potatoes are tender.  Remove from oven, drizzle with maple syrup and serve.
