Pesto Lasagna Roll-Ups

lasangarollups6This was a “what do I have in the pantry and fridge” kind of night!  I love the Caprese Lasagna Roll-Ups from My Honeys Place but didnt have any roma tomatoes on hand.  So I improvised and came up with these pesto roll-ups.  They were so easy and delicious that they are going to be put in our normal rotation:)

Serves 4 (2 roll-ups per person)

9 lasagna noodles

16 oz part-skim ricotta cheese

1 c shredded mozzarella + 1 c for sprinkling on top

1/2 c grated Parmesan

1/4 c pesto (use your favorite!)

1 egg

1/2 tsp cracked pepper

1/4 tsp sea salt

2 c marinara

Preheat oven to 350.  Grease a 8×8 glass pan and pour 1 c marinara in bottom.  Spread over bottom of pan.  Cook lasagna noodles according to package directions, drain.  In small bowl mix ricotta, Parmesan, pesto, mozzarella, egg, salt and pepper.  lasangarollsups2Lay 1 lasagna noodle at a time out and, taking spoonful of ricotta mixture, spread it out over lasagna noodle.  lasangarollups3Roll noodle up and place, seam side down, in glass pan.  lasangarollups5Repeat with remaining 8 noodles.  You might have to squish the roll-ups together to get all 9 to fit.  Pour another cup of marinara over top of roll-ups and sprinkle with remaining cup of mozzarella cheese.  lasangarollupsHeat covered for 30 minutes and remove cover and cook for a remaining 10 minutes to melt cheese.

These lasagna roll-ups, inspired by My Honeys Place recipe, are delicious and easy to throw together. They are a new take on lasagna that you will love!
