Coconut Chocolate Chip Oat Bran Cookies

coconutchocchipcookiesI am constantly trying to come up with recipes based on what I have in my fridge!  This is a reality when you are stuck inside with single digits and don’t want to venture to the grocery store with your kiddos.  These cookies were born out of a need to use up oat bran flour, mini chocolate chips and unsweetened shredded coconut I had and the result was delicious.  It made our Friday all the better:) Oh and P.S. don’t let the oat bran flour in this recipe scare you away.  It is a great source of fiber and protein but doesn’t compromise the taste!

Makes 1 dozen

1 3/4 c oat bran flour (I use Bob’s Red Mill brand or if you want you can substitute white whole wheat)

2 tsp cornstarch

1 tsp baking soda

1/4 tsp salt

1 egg

1/2 c coconut oil (not melted just soft)

1 c brown sugar

1 c shredded unsweetened coconut

3/4 c mini chocolate chips

1 Tbs vanilla extract

Mix coconut oil, egg, vanilla and brown sugar in standing mixer until smooth.  In separate bowl mix flour, cornstarch, baking soda, and salt.  Slowly incorporate flour mixture into wet ingredients.  Mix until flour is combined but be careful to not over mix.  Take bowl off standing mixer and pour in chocolate chips and coconut and mix in with spatula.  coconutchocchipcookies3Place silpat on baking sheet or grease pan.  Scoop dough onto pan to make 12 cookie dough balls. coconutchocchipcookies4 Place in refrigerator for an hour and a half (this is important bc these cookies with just spread if they don’t have time to sit in fridge).  After dough has refrigerated, take pan out of fridge and sit on counter-top to bring to room temperature while you preheat oven to 350 degrees.  Place pan in oven for 8-10 minutes until cookies are set and edges are slightly browned.  Remove and let cool.
