Puppy Chow Waffles (Valentine’s Day Breakfast)

puppychowwafflesValentine’s Day is TOMORROW!  There has been so much excitement around this holiday for the girls.  They were sick earlier this week and when I told my 4-year  old that she couldn’t go to school on Tuesday I had a major breakdown on my hands.  “But what about my Valentine’s Day party?” The party was actually today so I knew keeping them home wouldn’t interfere with the Valentine’s Day festivities, but it took a lot of explaining to convince her that she would NOT miss the party!

Tomorrow we are planning on making a big breakfast at home and handing out our cards to each other.  I have been thinking about what I could make for breakfast that would be extra special.  For some reason, puppy chow popped into my mind.  I remember the days, back in college, when my friends and I would gather in the Kappa house to watch the Bachelor.  Yep it was a weekly highlight – food, single sorority girls, and a hunky guy professing his love to 10 women at a time – what could be better?  Our house mom would whip up a huge bowl of puppy chow and we would sit, watch, eat and laugh.

So why couldn’t you make puppy chow waffles – anything smothered in chocolate, peanut butter and powdered sugar has to be good, right?  They are SO GOOD and you don’t even need syrup.  I thought about making a healthy version but there ain’t nothin healthy about these and I’m just fine with that:)

Serves 1

2 frozen whole wheat waffles

1/2 c chocolate chips

1/4 c creamy peanut butter

1 Tbs butter

1/4 tsp vanilla

1/2 c powdered sugar.

Put waffles in toaster.  Put chocolate chips, peanut butter, vanilla and butter in microwavable bowl.  Microwave for 1 minute or until contents are melted down.  Stir together.  Remove waffles from toaster and place in large bowl.  Pour chocolate mixture over waffles and coat them.  Put powdered sugar in large ziplock and and place waffles in there too.  Seal bag and shake until powdered sugar coats the waffles.  Remove and serve with fresh strawberries and milk:)

These puppy chow waffles take the classic chex mix recipe and replace it with whole wheat frozen waffles for a decadent breakfast!
Ingredients
  • 2 frozen whole wheat waffles
