Easy Crock Pot Taco Soup (Vegeterian)

It was Sunday afternoon and I wanted something SUPER easy that I could throw in the crock pot, take a LONG nap and wake up to a ready-to-go dinner!  This recipe hit all those requirements and was delicious.  You can also add some cooked ground turkey if you want the heartier, meat version:)

Serves 6-8

1 chopped green bell pepper

1 chopped sweet onion

2 15 oz cans kidney beans

2 15 oz black beans

1 15 oz can diced tomatoes

1 1/2 c frozen corn

1 packet ranch dressing dry mix

1 c water

1 Tbs chili powder

1/4 tsp garlic powder

1/4 tsp onion powder

1/4 tsp dried oregano

1/2 tsp paprika

1 1/2 tsp ground cumin

1 tsp salt

1 tsp black pepper

Combine all ingredients in crock pot, stir and cook on low for 6 hours.  Serve with crushed tortilla chips, sour cream, shredded cheese, diced avacadoes or any other favorite toppings!

This easy crock pot taco soup can be thrown together in the morning and cook all day for a cheap, healthy dinner!

  • 1 Tbs chili powder

  • ¼ tsp onion powder
  • ¼ tsp dried oregano
  • ½ tsp paprika
  • 1½ tsp ground cumin
  • 1 tsp salt
  • 1 tsp black pepper
Instructions
  1. Combine all ingredients in crock pot, stir and cook on low for 6 hours.
