Simple Homemade Candied Pecans (using maple syrup)

candiedpecansLast night, we had a group of students over who are going with Jonathan on a spring break missions trip to Jamaica.

Jamaica has approximately 2,500 deaf children. Mission To the World in partnership with CCCD (Caribbean Christian Center for the Deaf) hosts teams at four different project sites. Three of these are CCCD school campuses, while the fourth is the CCCD Deaf Village community.

I believe that they will be at one of the school campuses.  I am excited for this team of folks to share the Gospel with these kids and for the Lord to work on their own hearts in the process.

So how in the world does that relate to homemade candied pecans…stick with me, people!  I made Pesto Lasanga Roll-Ups as our main course last night and wanted a salad but couldn’t find any candied nuts at the store.  I threw in a bag of plain chopped pecans and thought I could experiment with making my own.  This was super easy and makes your house smell oh so good.  Beware – I had to stop myself from eating them before I ran out for our salad – they are addictive:)  So there you have it.  Jamaican missions trip = homemade candied pecans!

Makes 2 cups

2 cups chopped pecans

1/4 c pure maple syrup

1 Tbs brown sugar

1 egg white

1/4 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp sea salt

Preheat oven to 300 and place parchment paper on baking sheet.  Place egg white in medium bowl and whisk until frothy.  Add in maple syrup, brown sugar, cinnamon, nutmeg and salt.  Mix until combined.  Add in nuts and mix until they are coated.  Dump nuts onto baking sheet and spread out with spoon.  Bake for 30 minutes turning over at 10 minute intervals.  Allow to cool before serving.
