Peach Flax Green Smoothie

peachflaxgreensmoothieI’ve been stuck inside for 3 solid months…gray skies, ice, sleet and snow – you name it, we’ve had it this winter!  But today, oh today the heavens opened up and warmed this little town to a beautiful 73 degrees.  I wore opened toed shoes and the girls and I played in the back yard for hours…I can smell summer around the corner and I can’t wait!  I actually came inside from playing and was sweating…which gave me a perfect excuse to whip up some green smoothies.

Vanilla protein powder, frozen peaches, almond milk and some flax seed made for the most lovely lime green smoothie.  And have y’all heard of the health benefits in flax…we love these little seeds around here?!  I throw them in oatmeal, yogurt, baked goods, cereal and smoothies.  They are a great source of fiber – 8 grams per 1 Tablespoon.  They contain omega-3 – an essential fatty acid that helps fight against inflammation. They also contain lignans which help fight against breast cancer in women and prostate cancer in men.  All the more reason to throw this drink into our regular smoothie rotation!

Serves 1

1 c sweetened almond milk

3/4 c frozen peaches (about 4-5 peach slices)

1/2 c baby spinach leaves

2 tsp flax seed (I used Bob’s Red Mill Natural Raw Whole Brown Flax Seed)

2 Tbs vanilla protein powder (I used Aria Women’s Protein Powder in Vanilla)

Place peaches, then almond milk, spinach, flax and protein powder in blender and blend until smooth.  You can sprinkle the top of the smoothie with additional flax seed if ya want:)
