While the hubby is away, the girls and I have been trying to fill our days with play dates, peanut butter and honey sandwiches for dinner and pbs cartoons…thank you lord for pbs kids and 30 minutes of distraction! The other day we went to play over at a friend’s house and my friend Erica made this yummy quinoa salad for lunch. It had tomatoes, spinach, red onion, avocadoes, and feta with a lemon and olive oil vinaigrette. Delish and so simple! I used red quinoa b/c I LOVE the color and threw some sliced almonds in for crunchiness and sweetened the dressing with honey. I love power salads like this b/c they pack a punch with tons of veggies and are easy to pull out the fridge for a quick lunch…enjoy:)

1/4 c olive oil

1 tsp freshly grated lemon zest
Dash of salt and fresh cracked pepper
