Power Quinoa Salad w/ Lemon Honey Viniagrette

powerquinoasaladWhile the hubby is away, the girls and I have been trying to fill our days with play dates, peanut butter and honey sandwiches for dinner and pbs cartoons…thank you lord for pbs kids and 30 minutes of distraction!  The other day we went to play over at a friend’s house and my friend Erica made this yummy quinoa salad for lunch.  It had tomatoes, spinach, red onion, avocadoes, and feta with a lemon and olive oil vinaigrette.  Delish and so simple!  I used red quinoa b/c I LOVE the color and threw some sliced almonds in for crunchiness and sweetened the dressing with honey.  I love power salads like this b/c they pack a punch with tons of veggies and are easy to pull out the fridge for a quick lunch…enjoy:)

Serves 3-4

Salad:

2 cups cooked red quinoa ( I used Ancient Harvest Organic Red Quinoa but you can use regular quinoa if you can’t find)

1 c chopped fresh spinach

2 roma tomatoes diced

1 avocado diced

1/4 c diced red onion

1/2 c sliced almonds

Dressing:

1/4 c olive oil

1 Tbs fresh lemon juice

1 tsp freshly grated lemon zest

Dash of salt and fresh cracked pepper

1 Tbs honey

Mix all salad ingredient together in bowl.  Whisk all of dressing ingredients together.  Pour over salad (you may not need all of dressing…taste as you go!).

    man i feel like a celebrity being mentioned on the unmeasured scoop!!! : ) i think i need to make some this week! i haven’t made since you guys were here, but i’m tired of turkey and cheese roll ups—since avoiding all this wheat! hard to find good varieties! : )

      haha…yes, i need to too…tired of turkey sandwiches for lunch too:) Although I got some Great Harvest bread this week so they have been more bearable!
