The Perfect Guacamole & A National Championship

perfectguacamole2So in case you haven’t heard The Kentucky Wildcats are GOING TO THE NATIONAL CHAMPIONSHIP!!!!!! AHHHHH….cue the Hoosiers soundtrack!!! When you work with college students and live in a college town you naturally absorb the Cats fever and there’s nothing better than having a winning team to root for. This town bleeds blue and our family has started to too. My 4 year old started getting quiver lip last Sunday when my husband told her that if the Cats don’t win this game, we won’t get to watch basketball for another year. Poor child was on the verge of tears decked out in her Wildcat blue.

Last night, the festivities began at 7:30pm…and no basketball watching party is complete without some really awesome chips and guac. Guacamole brings me back to my college days when my friend Rebecca would whip up some traditional guac. She was such a connoisseur, she would never measure her ingredients, but would only go off of taste. My kind of girl!

I thought I would pass down the perfect guac recipe to y’all…no party is complete without it:)

Serves 6-8

3 Haas avocados
2 roma tomatoes
1/4 tsp minced garlic
1/2 tsp ground cumin
Juice of 1 lime
1/2 tsp sea salt
Few cracks of fresh pepper
1 Tbs chopped fresh cilantro
1/4 c finely chopped onion (optional – I’m not an onion fan so I leave this out)

Here’s how to properly cut an avocado: Cut your avocados length wise and remove the seed with a spoon. Make diagonal slits with a knife in one direction and then repeat in the other direction. cuttingavocadoSpoon the avocado chunks out of the skin and into a bowl. Repeat for all avocado halves. Cut roma tomatoes length wise and remove the flesh. Dice tomatoes and add to bowl. perfectguacamolePlace onion and garlic in bowl along with cilantro, cumin, salt and pepper. Finally juice lime and toss all ingredients together, slightly mashing the avocados. Taste and add more salt and pepper if needed. Serve with corn tortilla chips.

This guacamole is the perfect appetizer on game day!
