Soft & Chewy Toffee Cookie Bars

toffeecookiebarsWell, the National Championship didn’t quite pan out the way that any of us Kentucky Wildcats fans would have hoped.  We sat in our living room watching the game until midnight.  Jonathan yelled at the TV for 2 straight hours while I worked on the blog and gave out a shout here and there.  Seriously, I can’t watch the first half of these games…it’s too nerve racking to ride the ups and downs.

Earlier that day I knew we were going to need some fuel to keep our cheering going into the wee hours of the morning.  I had some toffee bits left over from my Dark Chocolate Cowboy Bark and decided some cookie bars sounded delish and toffee bits would make them all the better.  I found a base recipe here and tweaked it just a bit.  We devoured the whole pan in one day – argh…gotta work on the self control!

Makes 12 bars

2 cups of white whole wheat flour

2 tsp baking powder

12 Tbs melted butter (slightly cooled)

1 tsp sea salt

1 cup brown sugar

1/2 white sugar

1 large egg

1 large egg yolk

2 tsp vanilla extract

1/2 c semi-sweet chocolate chips

1 1/2 cups Heath Toffee Bits (1 cup in dough and other 1/2 used to sprinkle on top)

Preheat your oven to 325 degrees.  Melt your butter and set aside to cool down.  In a large bowl mix your flour, salt and baking powder with whisk.  In separate bowl, whisk your sugars, eggs and vanilla and then slowly whisk in your melted butter.  Slowly fold in the flour until it is incorporated into the wet ingredients.  Fold in the chocolate chips and 1 c of the toffee bits.  Line a 13×9 pan with tin foil and then spray with cooking spray.  Take the dough and evenly distribute it in pan, pressing it into corners.  Take last 1/2 c of toffee bits and sprinkle them across top of dough and then gently press them into dough.  Bake for 24-28 minutes (mine took 28) until they are slightly browned on edges.  Remove from oven and allow to cool before slicing into bars.
