Strawberry Bruschetta

strawbruschetta2A couple of weeks ago we celebrated the to-be wedding of one of our former students Taylor.  We gathered her friends together, whipped up some delicious dishes and talked wedding details.  It was a kitchen themed shower (my favorite!) so we asked everyone to bring their favorite recipe for Tay’s recipe box (if you’re feelin crafty, it’s such a personalized, easy and inexpensive addition to kitchen showers…I will share project details in my next post).

Among the menu items were pork tenderloin with dipping sauces, strawberry pound cake cups and my favorite…strawberry bruschetta.  The best sign that you have a good recipe on your hands: you find yourself eating the leftovers for breakfast…a little bit of carbs, fruit and protein…see…it’s a totally balanced breakfast!  Recipe details below:)

Serves 12

1 french baguette

4 oz goat cheese

1 pint strawberries – diced

olive oil

balsamic vinegar

6 large basil leaves

cracked pepper

1 Tbs sugar

Preheat your oven to 400 degrees.  Slice your french baguette into 1/2 inch slices on the diagonal – you should have about 24 slices.  Place slices of baguette on baking sheet and brush tops with olive oil using a silicone basting brush (I stole one from my girls’ play kitchen and it has worked like a charm, but I love this one from OXO too).  strawbruschetta1Bake for 15-20 minutes until sides are lightly browned.  While baking bread, dice strawberries and place in bowl with sugar, stir, cover and place in refrigerator for 30 minutes so strawberries can macerate. Remove bread from oven and set aside. Allow it to cool.  Spread goat cheese on to each slice.  Spoon about a Tbs of strawberries onto each slice.  With Kitchen sheers, roll basil leaves and cut into ribbons.  Sprinkle 2-3 ribbons of basil onto each slice.  Whisk 2 Tbs of olive oil and 1 Tbs of balsamic together.  With silicone basting brush or spoon drizzle oil/vinegar over each slice.  Lastly, crack fresh pepper over slices and serve at room temperature.
