Easy Winter Dinners Part 1

IMG_4820I don’t know what happened…but I blinked and it is now mid-November.  Life with kiddos and our college students has been busy, busy, busy.  I’m ready for Thanksgiving and a few days of down time and of course, lots of great food:)

Because of how busy life has been, meals around here have been kept to the bare minimum.  And by that, I mean very few, inexpensive ingredients that when combined make a hearty meal with leftovers.  And if I can put those ingredients in the crock pot, let them sit all day and come home to a meal that is ready to eat…even better.

So I thought I would share two staple meals from our menu (one today and the second tomorrow)….and please…share some of yours too…especially crock pot ones!

The first one is Sweet Potato Salsa Crock-Pot Chicken…this recipe was adapted from another pork recipe that I found on Pinterest.  I liked it better with chicken and decreased the number of ingredients to simplify.  It is so good!  We eat it at least once a week now.  Who knew salsa and sweet potatoes made such a great combo.

Ingredients

3 large sweet potatoes cubed

24 oz of your favorite sweet salsa (My favs are Trader Joe’s Pineapple Salsa or Whole Foods 365 Peach Mango Salsa)

1 pound chicken breasts

sea salt and cracked pepper

chopped fresh cilantro

Set crock pot to low (6-8 hours of cook time) and place your cubed sweet potatoes in the bottom of the crock pot.  Season your chicken with sea salt and cracked pepper on the front and back.  Place the chicken on top of the sweet potatoes in the crock pot.  Pour the salsa over top of the chicken and sweet potatoes.  When your crock pot is done cooking.  Remove the chicken and shred with two forks and place back in with sweet potatoes and salsa.  Spoon chicken, potatoes and salsa juices over white or brown rice in a large pasta bowl and top with fresh chopped cilantro (you can eat without rice too if you are staying away from grains).  This meal is very filling so a little goes a long way!

Ingredients

Instructions
