Easy Winter Dinners Part 2

IMG_4829Ok, Part 2 of Easy Winter Dinners includes a wonderful revelation I had at Trader Joe’s a couple of months back. I was shopping (getting pulled into buying way more than what I need…ahhhh but it all looks so good!) and in the spot where they hand out samples, they had paired some of their Latin Black Bean Soup and Cuban Black Beans  together for a hearty soup.  As I walked through the aisles I started imagining that soup with a scoop of rice on top, a few slices of avocado and a dollop of sour cream…hello heaven!  I went home and whipped some up and it has become another meal that is in our weekly rotation because IT IS SO EASY AND CHEAP AND DELICIOUS!

Serves 2-4

Ingredients

2 c Trader Joe’s Latin Black Bean Soup (or any other black bean soup…use 4 c if you are making 4 servings)

1 can Trader Joe’s Cuban Black Beans (or any other cuban black beans…1 can makes 2 servings, if you want to make more get 2 cans)

1 c uncooked Trader Joe’s Organic White Basmati Rice (or any other white/brown rice…if you want to make 4 servings, make 2 c uncooked rice)

1 avocado sliced

sour cream for topping

Place black bean soup and cuban black beans in a small saucepan and heat over medium heat until heated through.  Cook the basmati rice according to package directions.  Laddle about 1 cup of the soup (make sure you scrape bottom to get a good serving of black beans) into a soup bowl and scoop about 1 cup of rice on top of soup.  Dollop sour cream and place sliced avocado over soup as garnish.  Chow down:)

This easy and hearty meal combines cuban black beans, latin black bean soup, white rice, avocados and sour cream. It makes for the perfect winter meal!

  • 1 avocado sliced
  • sour cream for topping
Instructions
  1. Place black bean soup and cuban black beans in a small saucepan and heat over medium heat until heated through.
  2. Cook the basmati rice according to package directions.

    The chimchurri rice trader joes sells in the freezer section is an amazing substitute for the white rice. Adds a delicious amount of zip!
