Strawberry Bruschetta

This summery appetizer is perfect for a get together with friends or bridal shower!
  • 1 french baguette
  • 4 oz goat cheese
  • 1 pint strawberries - diced
  • olive oil
  • balsamic vinegar
  • 6 large basil leaves
  • cracked pepper
  • 1 Tbs sugar
  1. Preheat your oven to 400 degrees.
  2. Slice your french baguette into ½ inch slices on the diagonal - you should have about 24 slices. Place slices of baguette on baking sheet and brush tops with olive oil.
  3. Bake for 15-20 minutes until sides are lightly browned.
  4. While baking bread, dice strawberries and place in bowl with sugar, stir, cover and place in refrigerator for 30 minutes so strawberries can macerate.
  5. Remove bread from oven and set aside. Allow it to cool.
  6. Spread goat cheese on to each slice.
  7. Spoon about a Tbs of strawberries onto each slice.
  8. With Kitchen sheers, roll basil leaves and cut into ribbons.
  9. Sprinkle 2-3 ribbons of basil onto each slice.
  10. Whisk 2 Tbs of olive oil and 1 Tbs of balsamic together.
  11. With silicone basting brush, if you have it, drizzle oil/vinegar over each slice.
  12. Lastly, crack fresh pepper over slices and serve at room temperature.
